This is my favourite ‘naughty’ treat. It’s easy to make, it’s relatively healthy and it is delicious! I based this off of this Lorna Jane MNB recipe and to be honest, it’s still really similar, just with some tweaks. I also double their recipe as we eat it so fast! This is a very dark tasting chocolate, so I warn you that if you’re used to Cadbury’s Dairy Milk, you might find this difficult to get used to. It’s really rich and you can’t eat a lot of it. However, it’s such a good chocolately hit that gives you a good burst of good fats and nutrients! It’s perfect as a little treat that you do not have to feel guilty about.
It’s also a really adaptable recipe, and from my experience, lends well to experimentation. You can add in more nuts or dried fruits or anything you like to make it more of a chocolatey snack bar or leave ingredients out (or increase the chocolately part!) to make it more like a sumptuous chocolate.
The recipe calls for coconut butter and I make my own in my food processor but I have to say that the process is tedious. It’s a lot less expensive but it takes a really long time and doesn’t get nearly as smooth either. So I’ll leave this part up to your choice, keep in mind that it costs about $12 a jar or about $6kg for desiccated coconut!
What you need:
- 1 cup Coconut Oil
- 4 tbsp Coconut Butter
- 2 cups Cacao Powder
- 2 tbsp Rice Malt Syrup (I use this as it’s fructose free but any sticky sweet syrup will do)
- 2 cups puffed grains (MNB recipe calls for quinoa puffs but these are pricy, so I use whatever I find. I really like mixed puff grains for the variety but I couldn’t find them this time. Puffed rice is the easiest, and cheapest to find)
- 1 cup Pistachios
- Pinch of salt
